DISTILLER OF THE YEAR - Icons of Whisky, 2016

 

The founder of Nikka and the father of Japanese whisky, Masataka Taketsuru came from a long line of sake brewers dating back to 1733. Taketsuru went to Scotland in 1918 and became the first Japanese to study the art of making whisky. He used what he had learned in Scotland to create a Japanese style of whisky, even adopting the Scottish convention of spelling of whiskey without the “e.” After working for Kotobukiya Dillery for 10 years, Taketsuru went off on his own and built Japan’s northernmost distillery, Yoichi, on the island of Hokkaido, and Nikka was born in 1934. In 1936, Taketsuru began distilling his own whisky at Nikka, and released the first

bottle in 1940 despite the onset of war. Yoichi never ceased production, and to this day still crafts whisky in the traditional manner with pot stills heated by direct coal fire-a practice that is rare and no longer used in Scotland. Taketsuru’s early successes prompted the development of a second distillery in 1969, this time built on the island of Honshu in the foothills of the Miyagi prefecture, two hours north of Tokyo. This area is known for its water and is famed for hot springs and waterfalls. The distillery is surrounded by mountains and sandwiched between two freshwater rivers, providing fantastic humidity and air quality conditions for its soft and mild malt.

The King Car Group, founded by Mr. TT Lee in 1956, has decades of experience in food and beverage, but producing whisky has always been the founder’s dream. Construction on the distillery began in early 2005 and was completed in only nine months. The vision for the whisky was overseen by Master Blender Ian Chang in collaboration with world-renowned whisky consultant Dr. Jim Swan. The distillery is comprised of Scottish style copper pot stills from Scotland as well as Holstein stills. Fermentation takes place in temperature-controlled stainless steel tanks to protect it from the sub-tropical climate of Taiwan. To combat the high heat and humidity of Taiwan, the spirit vapors are cooled using both tube condensers and sub-coolers. The five-story warehouse houses 30,000 casks tied together because of the high risk of earthquakes in the region. The top floors of this warehouse can reach up to 108 degrees Fahrenheit, causing an angel’s share of no less than 15% annually. Kavalan, which means “flatland people,” is named after the Taiwanese aboriginal ethnic group that originally inhabited modern-day Yilan County, where the distillery is located. Yilan was chosen for its proximity to the cold spring water of Snow Mountain and the salty Pacific Ocean air. The subtropical heat and high humidity of Yilan cause an accelerated maturation, ensuring a rich, complex whisky in just a few years. Since its release in 2008,

Kavalan has received dozens of international whisky awards and titles, beating out traditional Scottish, American and Japanese brands, and causing a seismic shift in the world of whisky and conversation about aging.

NIKKA WHISKY TAKETSURU PURE MALT
43% ABV                                                                                                                       

Taketsuru Pure Malt is a combination of whisky from both Nikka distilleries: Yoichi and Miyagikyo. It’s matured in a combination of sherry butts, bourbon barrels and new American oak. Its gentle malt flavor, fruitiness and well-balanced approachability make it a perfect entry point into the range of Nikka whiskies.

Nose: Clean and bright, with red-fruit notes come bursting out of the glass, with some extra sweetness – glazed fruit tarts.

Palate: Soft, fruity mouthfeel, then some spicy clove appears along with a cherry-menthol note.

Finish: The rich fruit lingers.

NIKKA WHISKY COFFEY MALT
45% ABV                                                                                                                                                 

Distilled from 100% malted barley through a Coffey still, which is rarely done given the complexity and skill required, Nikka Coffey Malt Whisky boasts notes of cinnamon, clove, lemon and rich oak, making it ideal for sipping neat or as the base spirit in a cocktail. The Coffey stills contribute the unique depth and flavor of the distillate, not found in modern column stills of today.

Nose: Fresh and clean, with aromas of candied lemon peel and rich cake spices.

Palate: Robust and spicy, quite a dense mouthfeel and richly textured, with cinnamon and clove on the palate, and citrus-tinged freshness to lighten the load.

Finish: Harmonious blend of dense spices, rich oak, and lemon and orange notes. Delightful.

NIKKA WHISKY COFFEY GRAIN
45% ABV                                                                                                                                               

Nikka Whisky Coffey Grain is a grain whisky, which is typically used for blending but rarely bottled on its own. The secret behind Nikka’s grain whisky is the unique flavor generated by Coffey stills, which are traditional continuous stills patented by Aeneas Coffey in the 1830s. The rich corn and touch of honeyed citrus taste of Coffey Grain is also excellent in cocktails.

Nose: Sweeter and fruitier than the Coffey Malt, this is has oodles of sweet spice, mango and papaya aromas, candied orange peel and coconut.

Palate: Toffee popcorn, with more of that heady citrus and tropical fruit. Quite a mouthful.

Finish: Not especially long lasting; rich oak and marmalade notes dominate.

NIKKA WHISKY YOICHI SINGLE MALT
45% ABV                                                                                                                                 

This is a single malt from the Yoichi distillery, Nikka’s first distillery built in 1934. The founder Masataka Taketsuru chose Yoichi in Hokkaido because of the similar environmental conditions to Scotland, where he learned whisky making. Yoichi single malt has pleasant peaty notes and smokiness originating from the traditional direct coal-fired distillation as well as a briny hint delivered by the sea breeze during the aging process.

Colour: Vibrant gold.

Nose: Full-bodied, smooth. A mellow peat softly coats the aromatic palette at first, growing more powerful with time, as smoke, soot and salty notes transcend the initial nose. The aromas then evolve towards candied citrus fruit (lemon, orange), black liquorice and spices (nutmeg, ginger), and opens up with roots and dried twig aromas. Heady and floral (carnation, iris), it grows increasingly complex.

Palate: Firm, powerful. A well-balanced attack gives equal footing to aromas of peat, smoke, spices, fresh fruit (melon, kiwi) and nuts (almond, walnut), which it delivers in spades. The mid-palate starts off with chocolate notes, but the peat soon takes the lead once again.

Finish: Long, silky. Extremely mature, it overflows with ripe fruit (pear, Mirabelle plum, apple). The peat starts taking on an herbaceous and malty character, while the salty flavours gives the finish plenty of depth and coastal freshness. The final nose offers menthol, spicy (coriander, dill) and earthy (leather, chestnuts) notes.

NIKKA WHISKY MIYAGIKYO SINGLE MALT
45% ABV                                                                                                                     

This is a single malt from the Miyagikyo distillery, Nikka’s second distillery built in 1969.
The founder Masataka Taketsuru chose this site in the mountains of Sendai to contrast with his first distillery, Yoichi, located in the coastal area. Using less peaty malt and distilled in a pot still heated by indirect steam, Miyagikyo single malthas an elegant fruitiness and a distinctive aroma with a strong Sherry cask influence.

Color: Deep gold.

Nose: Full-flavoured, rich. Initially, concentrated iris notes hint at the extreme intensity of the nose. It then develops aromas of malted barley, exotic fruit (banana), liquorice and camphor. Notes of burnt wood and ash progressively settle over the aromatic palette. Long after, white flowers and beeswax make an appearance.

Palate: Firm, lively. Malted barley is at the heart of the palate, coated in herbaceous, liquorice, spiced (ginger, cinnamon) and chocolate tones. Very elegant, the mid-palate also delivers plenty of energy and as it draws to a close, fresh tobacco leaves and coconut intertwine to create a natural symphony of aromas.

Finish: Long, soft. It evokes the scent of wilted roses. Fine tannins balance its tangy character (lemon, grapefruit). It lingers on notes of tobacco, spices (cardamom, ginger), toasted nuts and stewed fruits (apple, damson). The final nose reveals exotic notes (lychee).

KAVALAN CLASSIC
43% ABV

Kavalan Classic was the first whisky produced by the distillery, and it expresses the quality and character of the brand. It is strongly influenced by the cool air of northeastern Taiwan and the pure water of Snow Mountain. Kavalan Single Malt consists of mainly refill barrels, ex-bourbon barrels, and a small percentage of sherry barrels.

Color
Lively and passionate amber.

Nose
Clean, elegant, floral (pleasant & refreshing fragrance of the butterfly orchid), fruity and seductive. With hints of honey, tropical fruits (mango in particular), pear drop, vanilla, coconuts and suggestions of chocolate

Palate
A hint of sweet mango juice with that spicy complexity and gentle warmth on a medium, oily and citrus finish.

KAVALAN CONCERTMASTER

GOLD MEDAL - World Whiskies Awards, 2016

Kavalan Concertmaster uses Portuguese ruby, tawny and vintage port wine casks, complementing Kavalan’s distinctive flavor profile to compose a harmonic symphony. Kavalan Concertmaster single malt whisky is first matured in specially selected American oak casks, and then finished in port barriques for one year.

Pleasant brownish red.

Nose
Tropical fruitiness with honey, vanilla, coconut and candy floss.

Palate
Rich bodied with natural sweetness and complexity.

KAVALAN EX-BOURBON OAK

Kavalan Ex-Bourbon Cask is aged in ex-bourbon casks that are made of quercus alba American white oak. This species of oak yields fragrant and delicate wood spiciness and vanilla notes influenced by the area’s unique local weather conditions.

Pale Golden.

Nose
Clean & fresh tropical fruitiness with pleasant vanilla, coconut and spices. Imagine being soothed by that comfortable see breeze with the calming and refreshing effect. This is what this malt can do for you after a hectic office day.


Palate

KAVALAN SHERRY CASK

Kavalan Sherry Cask is matured in Spanish oloroso sherry casks.

Color
Deep mahogany.

Nose
Clean and complex with multi-layers of dried fruit, nuttiness and spices with some marzipan and vanilla touches to it.

Palate
Smooth, well-balanced natural sweetness, full with pleasant dried fruit and spices. The whisky leaves a beautifully elegant and long finish.
